How do you check the strength of antifreeze/coolant, to know it it needs changing?

It doesn't need changing if the mixture of water to antifreeze is weak, just top it up with antifreeze to reach the right mixture.

Your coolant should be renewed every 2 years due to it losing it's anti corrosion properties.

You can get a tester from Halfords, very cheap, full instructions come with it.
Simple, just draw off a small amount in a plastic container.
( A plastic bottle cap will do ).
Then leave it overnight in your freezer.
If it ices up then your mixture is too weak.
or you could buy an anti-freeze tester from an auto shop which will tell you.
