If I am stopped by an unmarked police car with one officer and accused of driving without due care and attention, is the officer supposed to show me the video of the offence while I am sitting in his car ?

Of course not !

A police man walking down the road can charge you with driving without due care and attention.
Is this a wind up?

"I burgled a house but no-one videoed it, so I guess I'm ok".

numpty.
Looks like you typed the title of the question without due care and attention too! :o)
depends what you where doing but these days plod tries that one on all the time. Just tell them you intend to plead not guilty and they'll run a mile unless it's a genuine case.
and no they don't have to show you the video, why would they?
In a lot of cases there must be 2 forms of evidence
e.g. 2 policemen see the same thing, policeman and a witness, policeman and video evidence, speed cameras have the camera and the lines on the road are considered the 2nd set of evidence

The police can still charge you but it comes down to their word against yours and usually the court will believe Mr Plod

I would still fight a case like that but you may well be found guilty and pay more costs/fines etc. although often they would just drop the case
