I'm an organist and the most non main stream thing I've ever been asked to play at a wedding was Brian Adams "Everything I do"
Thing is, if you're going to go for something really modern it might not sound as great on the organ and it really depends on the type of organ in the church and the organist! Best to talk to your church organist about it, and if it doens't work out, why not hire a trio instead? A trio usually comprises of a flautist, a violinst and a cellist and they will be able to suggest many different pieces and they sound fab.
