Thank God this one is over, it's been running for bloody months. I'll admit, this is one of those cases that strays very close to the line of what is acceptable and unacceptable in hiring your staff.
The bottom line is that you're going to really struggle to justify in most professions that you need a certain 'look'. There are times when you could specify a level of attractiveness, or a certain ethnicity, but hairdressing is not one of those in my opinion.
The debate over acting has reared it's head. There are parts that require a certain ethnicity. You can't have a black Winston Churchill, and you can't have a white Martin Luther King. But unless based on real people, most parts don't have to be racially specific. I see no reason why you can't have a black Joseph, or Nancy etc. Look at the Shawshank Redemption - Morgan Freeman is playing the part of Red, written as a white Irishman. And a fine piece of casting it is too.

I thought that when the story first emerged - there are loads of ways she could've turned her down for a job without ever needing to mention the head scarf.

If Germany decided to attack us a third time, this time they would win. There's not a chance enough Brits would be arsed to fight them next time. And be in no doubt, it may be nominally a minority of extremists, but so were the Nazis in 30s Germany. They bear all the hallmarks of Nazi fascists - utter intolerance for anyone else's way of life. Our toleration of intolerance will be our downfall.

Did she actually try to establish whether this girl was a good stylist?
Hands up to has ever walked into a hairdressers/barbers and asked for the same haircut as the stylist?
Furthermore, can anyone name a celebrity stylish who doesn't have horrible hair?

If you take this as purely an employment tribunal case without getting overheated about Muslims, Christians or any other religion, the salon owner was very stupid with the way she handled it. Any sensible person employing staff these days knows the law regarding employment and she should have just used another excuse not to hire the girl. I'd guess she's probably too young and inexperienced to be running a business, or maybe she's just a bit naive?
