What is short-sheet? Please tell me how to do it and the purpose of it.

It's a prank or practical joke to play on someone.  You make up the bed by doubling back a single sheet so that the bed looks properly made but will not allow a person to lie at full length in it.

Here's another description of the process from a website, in case it explains it any better:

You �short-sheet the bed� when you make it up, all nice and neat, sheet properly folded over top of blanket, perhaps even folded down further at the corner, inviting you to pull back the covers and lie down. The truth of the matter is hidden about halfway down, underneath the blankets. The top sheet has been folded in half, bringing the bottom corners up to the top corners, so when you try to stick your legs in, the sheet stops them at the fold, about halfway down the bed.

Yes steveD you are correct to call it "an apple pie bed" though I don't know why.:-)
