If you were sick of something you'd also be tired of hearing about it. I think it's one of those phrases that just comes into common usage.
A lot less fun than "tired and emotional"(from private eye I think)-meaning the mis-translation of "in vino veritas" i.e Truly Pissed
The earliest recorded use of the phrase 'sick and tired' is an Americanism that dates back to the 1780s, so it has been around for nearly a quarter of a millennium. As it happens, it was applied to conscientious objectors whom the writer had had enough of!
