Carcassonne is simply stunning and if you go I'd recommend staying in Le Donjon:

...two useful tips if you intend to see Carcassonne - 1) avoid late July and August as the crowds are mega 2) the Donjon sure is good but any hotels in the old city charge top dollar. Try the Trois Couronnes just on the modern side of the bridge - great views of th old city from the top-floor restaurant.
