if a pedestrian is someone who is walking,would i be correct to say i`m just pedesting to the shop? I`m taking the dog for a pedest?

No, because the noun 'pedestrian' does not come from a basic verb-form in the same way as 'walker' does come from 'walk'.
Of course, there is no reason on earth why you shouldn't speak of going for "a pedest", if it appeals to you. The problem is that some people might well imagine you really mean 'pederast'...at least if you were a man! (Look it up.)
What about "Im just going for an equest on my horse".
My son always says he does'nt mind driving, but he hates passenging.

rojash your right-its me bit of a dumbo.I thought of that as well anyway its late i`m just going to pedest upstairs and go to sleep lol!!
If you're going for a really specific walk, and correct anyone who goes slightly off course, you could be called a pedant.
