Possibly from Mark Twain's "The Undertaker's Chat" 1875

(*don't quote me on it, just yet!*)

If anybody else knows different, I will be most interested!!
The phrase 'one-horse town' is first recorded in a publication called Knickerbocker which appeared in the USA in 1855.
