For example I hate hard bristles on a broom, make my teeth go on edge and I get goosebumps. My eldest son gets the same with cotton wool? Some people I know don't like chip forks in this way.

I call it "Goes right through me"
I hate it when someone rubs their feet across a carpet or if one of my kids has spilt their drink on it and I have to rub it to clean it I hate the feel look and noise I put one hand and arm over my ears and close my eyes, doesnt work though. They laugh at me coz I look so stupid cringing.

Someone sharpening a knife on one of those things that you pull the knife backwards and forwards through. I`m OK if it`s done properly on a steel like a butcher does. My husband using tooth floss to get something from between his teeth.
My husband finds it puts his teeth on edge just to think about rhubarb, let alone eat it!

I too describe those things in terms of their impact, in the absence of an appropriate noun. I say "it gives me the willies" or "the heebee-jeebees" or (like you) "it sets my teeth on edge."
But we could certainly invent a noun that would fill in the blank in this sentence: "Chalk squeaks and biting styrofoam are two common examples of ____."
Jeebifiers? Dental rotators?
