I've heard that many times and I was wondering what the phrase "plead the 5th" means

The Fifth Amendment to the Constitution of the USA deals with people's rights with regard to criminal cases. One of the key elements is that no-one can be obliged to incriminate himself. So, to "plead the fifth" just means that you're planning to stay quiet on that basis. If you click here, that will link you to a web-page which explains further.
it does not have to be a criminal case, i've seen it used during divorce proceedings.
