Actually last 3 episodes have had little slang or was 'easy';
"He's a bit mutton" - mutt n jeff -= deaf (cartoon characters)
"He couldn't keep his thieving Germans off them" German Bands = hands
and
" someones done the bubble on you and...." bubble and squeak = speak , in this context bubble = to inform

still got a few more to watch
ta ta

Why do we say "ta ta" for goodbye? (Often used by Terry in Minder)?

All the dictionaries agree that ''Ta ta'' began to be used in the early 1800s, but its origin is ''unknown''.
Ok..being a Londoner i have different answers than you already have which are:
German=Shmitz=Mitts=Hands
Bubble and squeak=Bubble(cries) and squeak=squeal(informs)
Ta Ta=Thanks and goodbye
Mutton n jeff-Deaf (cockney slang)
