The earliest reference to a woman's being 'like' a cow dates back to the 1690s. However, the very first direct 'you cow' addressed to a woman appeared in writing in the 1860s. I've no doubt adjectives such as 'stupid' - and many much worse! - began to be applied shortly thereafter.
