16a Bowled out, critical and impatient (5) ITCHY. Why?

10d Plate for leader of regiment celebrated in a mess (11) DISHEVELLED. Plate = DISH, but why the rest?

21d Keen before lunch, one's heard (5) MOURN. Why keen?
