Yes it has to changed according to the preamable from Jersey Cow to Mersey cow .
I couldn't see any other answer to this clue as these are the only letters which fit .Where he got black and white from is a mystery because as you say they're not black and white .

Jersey cows can be almost black occasionally but is a poor clue really.
