I'm stuck on 31d. Is it an F or a G? and why?

mintyman, it's a g as in Greenery.
My last one is 19d. "Handle spades totally lacking in handles" H?FT. I think the definition is the first word (singular) which would make the missing letter an A, but I don't get the wordplay - how does "spades" fit in?
