Fair enough, Cap'n - I used Chambers which gives 'castOr' first, Collins gives 'castOr' as the British variant & OED (Online) which doesn't give 'castEr (sugar)' at all - personal choice then? :-)

Collins does indeed say that "castor sugar" is the British spelling of caster sugar and as "castor" is a wheel, then perhaps this is the answer the compiler is looking for.
