I think I've got these from the definition, but I'm damned if I can parse either of them.

Shortage of staff with cook leaving nursery (6) ??e?h?

I have SCRAMBLE for the first and CRECHE for the second - can anyone explain why?

OK, I can see that. And that means the second letter of the other one is definitely a C.
