Please exppain these to me.
1. So dish may appear very hot, on the surface. Ans flambe. Almost seems like a straight clue as flambe can be described as covering food with spirits and setting it alight. I'm puzzled as to what "so " is doing .
2.Gone, but as shown by two parties, perhaps, not forgotten. Ans extinct. No idea how cryptic works.
3. A certain element seen to become increasingly heated . Ans mercury . If you heat up mercury it eventually evaporates . Clearly I'm missing something.
4. He gave himself no time to answer final Latin question. Ans Brutus as in stabber of Caesar -something to do with "Et tu Brute" ? Can't get it.

3 mercury expands as it heats up.
4 Caesar died before Brutus could answer 'Et tu Brute?'.
You're probably right about 1 - the flames are only on the surface when cooked 'so'.

I was thinking in terms of a mercury thermometer where the mercury expands as it heats up, and rises to show the temperature. Mercury is "seen" when it becomes increasingly heated.
