Based on modification to 26d, and the title, it is clear what those 11 answers change to when modified. But still 8 clues remain.

Captain2: I have never heard of ample as fatty but I thought it was a British euphemism.
My wife is the Professor, elliemay1, and she set the gender too - I'm a man!
It seemed a waste not to use the opportunity for something (she's only posted one or two questions on it, and she's useless at crosswords}.
My previous presence on the AB was also under one of her aliases (but that was ages ago).

You're not drinking alone, klazo - I've got a Penderyn on the go so, ''Here's to You!'' (with Chambers to hand you'll find I'll very quickly become obsolete}.
Whiskey is not my cup of tea (even though both my parents were Irish) I don't drink it (Bad experience when I was young) Bourbon (Jacks) is ok. But I' ll take that drink with you :-)
