Acadian (A Canadian rejecting an). French-speaking Acadians were thrown out of Canada and emigrated to Louisiana.
The Acadians were "early settlers" in the eastern part of Canada. Many of them later settled in the southern states. The word "Cajun" derives from their name.

The clue gives "a Canadian" rejecting "an" which leaves you with "acadian".
