I've heard of scoring drugs... Do you need the knife for protection from your "pig-dealer"? :-)

No I saw Jamie Oliver on the pig show and he suggested it , my knives are blunt and you won't get good crackling without the fat being scored! :D

I only saw it by chance so I don't know what it was called, but it was about pigs, and the pork belly he cooked looked delicious, hence todays choice :D
