garum
Hi Foxspur, I have the same problem in the same corner.
with the answer you have been given I am beginning to wonder if there has been yet another missing bold line after the 'm'. This has happened a couple of times in the past few weeks.
Let us hope someone can clarify the situation.

garums???

The clue does say bites, so garums could be right
In which case 28ac is SL?E
28, YLKE, archaic for ilk or kind. Ely is a cathedral city (see) around Knight, going round (reversed): YL(K)E
There is a fish called the goramy (or gourami) so that could fit 18d if it ends in Y. Don't really see the wordplay though.
strong tasting = gamy, or = "At a former time, on a former occasion; formerly, previously, before"; hence g(or)amy
