Can anyone enlighten me as to the question -


Duckanoo is:


saltfish steamed with vegetables and tomatoes

According to all my searches it isn't any of them. I've got a headache!

Duckanoo Veg HT DP West Indian 50mins



Makes 18 Hot Vegetarian Dessert Pudding Caribbean Eggless



Ingredients

75g/3 oz Polenta

125g/-5oz Self Raising Flour

150g/+5oz freshly grated or Desiccated Coconut

1/2 teasp Grated Nutmeg

1/2 teasp Ground Cinnamon

240ml/8fl.oz. Milk

1/2 teasp Vanilla Essence

50g/2oz Sultanas

50g/2oz Dark Brown Sugar

2 tbsp Water

25g/1oz Butter, melted

Yes I found that ducanoo is a sweet pudding but not salt fish steamed with veg.

In the "Telegraph's" own Travel Supplement on 12 March 2005, there was an article by Andrew Purvis, which claimed that "Duckanoo" was an Antiguan national dish of "saltfish stewed with vegetables and tomatoes".


I found this by going in to www.telegraph.co.uk and putting "duckanoo" in their search facility.

I thought it must be a caribbean type recipe but just couldn't find it.

I researched this last week !!


In most places, duckanoo is a purely veggie dish,


but in one location it did include saltfish.
