I'd say tortilla
Tortilla is an anagram of 'littoral', which could mean 'flat' in the sense of the area surrounding a river or lake. I've always felt indirect anagrams to be a bit dodgy though.

Thanks - it looks like it is Tortilla from Steinbeck novel 'Tortilla Flat". Cheers, Andy
