Can anyone tell me why electricity pylons are called derek?

They aren't.

Commonly a derrick is either a framework erected over an oilwell or a simple crane having a moveable boom.

However I have noticed that a lot of fire engines are named Dennis.

They could be called Monty

as in Monty Pylons
John Derrick was an Elizabethan hangman; he gave his name to scaffold-shaped things like cranes.
