Why do we reject the null hypothesis when the calculated value is greater then the one found in the table?

Because if you are assuming the null to be correct then the chance of chi being bigger than the table value is very small - i.e. 5%, 1% or whatever you use. You're basically saying "this value is so unlikely that we should reject the null."
