Probably we wouldn't, and wouldn't be able to do anything about it, but, as danny's link makes clear, it's also not a threat either in our lifetimes or, probably, ever. The better way to view Vacuum Decay, as also stated in the link, is as a test of our understanding of the Universe.

Put simply, if there's ever a "prediction" that a Vacuum decay will occur soon, then the prediction is wrong and there was something missing when making it.
