i think some are on friday and monday but not on sunday.

I think most are open on Friday and Monday but with restricted hours. Basically the usual Sunday opening hours.

Most shops don't open on Easter Sunday. 

I found this out by driving 40 odd miles on Easter Sunday to a large shopping centre and finding it closed (apart from the food outlets).  So drove to the city centre instead, again, closed.

So came back home and went to the pub instead.

yes all high street shops will be open i would think as it is a bankholiday however banks won't be!!!!!!!!!!!!!!!!!!!!!!!!!!

Yes in the UK

Personally I don't think shops should be compelled to close on religious grounds. If we are free to chose what religion and not to be religious then why should one religion impose their beliefs on us. Also if that is their belief why do they need the temptation completely removed by compulsery closure?
