Why oh why do you have to sign some arbitrary peice, of  paper, ie not a withdrawal slip just some sort of list, in the supermarket when you have cash back even with chip and pin?

Two reasons - one, it proves you've had the cash, and stops any unseemly arguments about being ripped off - from either side, and two, it helps the supermarket keep a check on how many people use the system, so they can keep enough cash in their tills throughout the day.

I think it's 'psychological' too: reminds the cashier to actually hand you the money, not doing so is a pretty serious thing to do!
