I am going on holiday to Whitby in October and would very much like to watch the fishermen unloading the catch from the boats when they come in. Does anyone know what the best time for this is? Thanks.

I'd try ringing the Whitby Tourist Information.
It depends on the tides, so will move later all the time.
As above TI should be able to help, just make sure they know when you're going.
I have a copy of the Whitby tide tables so if you want sepcific dates, just ask. The large trawlers only unload at mid to high water but the smaller boats (cobles) unload their catches of crabs & lobsters at anytime of tide. The fish market where the catches go is only open on a morning. If you hang around between 8am and 10am you will see something being unloaded. If you go at a morning high tide you are not guaranteed to see a trawler unload as there may not be any trawlers in that day. There are large gates  to stop the public walking onto the quay but it is a public right of way so no one can stop you. However, you'd probably get some filthy looks and a few choice swear words aimed at you!
Sorry, can't answer your question but if you want to eat fish then perhaps this is the place to go

I had a day trip to Whitby in August and they were queueing down the steps and 20 yards along the road to get in at lunchtime, in the pouring rain. I had to make do with excellent cod and chips takeaway from nearby. Lovely place.
