Cousin twice removed ( you and your cousin are same generation hence cousins) his son is your cousin once removed ( by one generation ) so his child is your cousin twice removed ( by two generations )

I think brenda if your uncle's cousin is your mum or dad's cousin as well, then you will be the 2nd cousin once removed of the baby
