Am I right in thinking it's impossible to fire both barrels of a twelve bore simultaneously? I hope so a drink rides on it!

I don't see why not.(I'm no expert)
It depends.....some versions have got two triggers and you can, some have only one trigger and you can't without modifying the gun.

I don't think so as the triggers are off set you draw your finger across one trigger onto the other
There are vids on YouTube that show you how to do it safely.
an acquaintance was taken rabbit shooting with a friend some years ago, he'd never fired a shotgun in his life. when the acquaintance lined up the shot, he was told to fire - which he did, both barrels at once. an enormous flame emitted from the gun, the recoil forced him back several feet, but his flat hat stayed where it was, then gently fluttered to the ground.

With a side by side you need a little bit extra as in above clip, an over and under only has one trigger so you cannot fire both together.
