if i set a pop mail account to delete messages off the server after 5 days what will happen if someone comes back say 6 days later and checks their mail. Will all the unread mail be left on the server still ?

You have answered your own question. Delete after 5 days means unread or read mail.

Err actually i didnt what im thinking is if i havent checked my mail in outlook after 6 days can i still download the unread mail from the server or does it only delete mail what has been read or something?

it will only delete mail that has been read...

May I suggest using IMAP if your provider supports it, much better than POP
