Does anyone know if you have to install matching pairs of RAM on this laptop? or can you just add one new RAM to the existing one?

what do you mean by matching pairs?
if you mean manufacturer then no,as long as they are both
667 Mhz DDR2 Memory which i think your laptop has then they will be ok.
if you mean do they both have to be 512mb or 1gb then no you can also mix sizes as long as both are the same spec i.e 667 Mhz DDR2 Memory .
Matched pairs aren't required, but it's often better as you'll get better performance.

(assuming matching pairs in the sense of two 512MB sticks, or two 1GB sticks, etc.)
