Editing text from a scanner

I am using an Epson Photo PX800FW four in one. Is there any way I can scan a document which will then allow me to edit a portion of it?

SimpleOCR http://www.simpleocr.com/ is freeware and does convert scanned (printed) text into an editable document. So it might do what you want (but no guarantees).
As Jumbuck indicates, you need an OCR ('optical character recognition') program. It examines the image taken by your scanner and attempts to convert the 'squiggles' in it (that form letters) into words.

Some OCR programs are better than others. SimpleOCR is quite good but there are better programs available. Normally you'd have to pay to get hold of a really good OCR program but you've probably got one already. That's because the Epson PX800FW is normally packaged with ABBYY FineReader 6.0 Sprint Plus, which is exactly what you want.
