Password protect a file in Excel

How can you password protect a file in Microsoft Excel or Word. I used to do it easily in the Windows 2003 version simply by right clicking on Save and picking the option but in the latest version (home and Student) I can't see the facility anywhere? You could never password protect a folder (although I could never figure out why?) and I assume that's still the case.
