cut or copy the individual pages and paste them into a new document
Which type of file is used to store these scanned images?

A pdf.
What software are you using to try and do this?
Question Author
Adobe Reader.
It's not straightforward - Adobe reader isn't designed to do that. If you've got Illustrator, or a full version of Adobe Acrobat, it's easier.
However, first download/install CutePDF (free and legal). This makes another "printer" appear, when you print to it, it creates a .pdf file.
Open the 55 pager in Adobe Reader.
Print the 2 pages you want to CutePDF - it will create another .pdf containing just the 2.
