My mp3 collection has the album covers embedded in them (there is no jpg in the folder), but the picture still comes up. How do i change the picture?

Hmmm, are you sure that the images aren't present in the folders. They may well be hidden. You can show hidden files and folders by clicking Tools > Folder Options > View in windows explorer. There's also a small tip here demonstrating how to create your own album art:

Windows explorer won't show you the file or file name of the album art no matter how hard you look. You need a program that will show you everything in that folder. The CD burning program called Nero will show you the file names of any file it finds. To change the picture manually you need to find the file name and call your new image that same name. File names are in this format;
AlbumArt_{********-****-****-****-************}_Large.jpg
The * are hexidecimal digits assigned by Media Player, you need to know them to give your new file the same name.
Media Player uses two pictures for album art depending on where its showing you the album art. One's a small picture and one's a large picture (both the same image, different file sizes), the file names end in _Large.jpg or _Small.jpg but you can use the same file for both names, it doesn't really matter how big the file is.
