In Skype, click Tools / Apps / Get Apps
You'll see loads of different apps which offer call recording

That will depend on the app and/or the way you configure it.
I use PrettyMay Call Recorder (audio only) and record all my calls. There is an option to have it notify the caller that they are being recorded, but I have it turned off. This is legal in the UK, but illegal in (for example) the US.
