If I were to connect my iPhone to an infected laptop to back up apps to iTunes would the phone become infected?
Also, if I were to connect an iPod touch to the same infected laptop to transfer the apps from iTunes (backed up from phone) to the iPod touch would the iPod become infected?

Your computer and the periferals you use on it run different operating systems. A vunerability in code in your computer will almost certainly not be present on ypur phone.
