Can I Wipe Some Things From An Iphone And Not Others

I've just got a new phone and my boyfriend wants to buy my iPhone 4 from me. I know you can totally reset the phone (have done this before when selling to Mazuma) but wondered if there was any way of deleting some bits but not others. For example, he'd happily keep all my music on there.
The thing is, he doesn't have a computer. His brother has one which he can use but obviously if he downloaded iTunes, it would be empty until he added things on there.
I know he could obviously buy music through iTunes on the phone itself so that's not a problem. But ... the phone is set up to my account. Is there any way of changing that? Or would he have to set up an iTunes account in any case? Don't suppose there's any way of having 2 different accounts on one computer (he could use mine in that case)?
I'll be going into an Apple shop this weekend in any case to ask them, but thought I'd ask on here too, just in case there's any tekkies out there who can help in the meantime!!

Yes you can have two or more iTunes accounts on one computer, you can also have stuff from more than one iTunes account on one phone, it will just ask you for the relevant sign in before updating apps.

So is this what I should do? ... Set my (old) phone back to factory settings again (to wip all my info off), boyfriend puts in his SIM card. I then open iTunes and do what you said to create new account. Will he still be able to use music etc on my iTunes or will I need to copy them over somehow? Once that's sorted and I've manually marked what he wants on the phone I can synch it.
Anything else I need to know?
I take it I just need to log into the correct account each time I go into iTunes to make sure the right phone is synching to the right account?!

Here's what I did.
1. Connect the iphone to your itunes account
2. Remove the stuff from the iphone that you don't want to leave on there.
3. Back the iphone up to the computer via itunes.
4. Boyfriend puts the new sim in.
At this point you should have a phone with his sim in with what you want on the phone.
5. BF creates new account on itunes. BF connects phone to itunes and backs it up to his account. HE DOES NOT SYNCH THE PHONE UNTIL HE HAS BACKED IT UP.
Your BF can't have your music on his account but you can leave it on his phone.
