Is there a way in which if I open an email on my Gmail on my Android tablet, that it will still remain as an unread message when I log into my PC, until I've read it?

I recently got a tablet and logged it into my Gmail account. But now when I read an email on my Gmail account it also comes up as read when I log in on my PC but I would prefer that it would come up as unread until I've opened it there too.

Is this called syncing, I'm not sure.

When you have read it on your tablet, can you then mark it as "unread"?

Yes, that could be a solution R but I'd prefer that they were not connected
You're using IMAP as your email protocol and that's one of the behaviours of it, it marks the mail as read on the server, you're only option would be to change the tablet to POP3 but then you don't get the 'push' feature so you have to go to the server periodically to get your mails. There may be other mail apps for Android which allow you to override this behaviour but I'm not an Android person so wouldn't know.
