My text messages arrange themselves as a chronological list, but also by sender. So to delete any means deleting all messages from that person.

Or am I wrong?

I'm not sure how the Iphone works, I have an android phone and I'd assume they work in a similar way.
Here's how android works:
Open up the conversation with the selected person.
From here, if you press and hold on a selected message, it will give you the option to delete that particular message. You can delete individual messages this way.
If you wish to delete more messages, in the conversation there's a tab in the top right corner, where you can click delete and then you can select messages by ticking the boxes on the ones you want to delete.

Like I said though, this is for android phones - but hopefully the IOS will work in a similar way :)
I'm using an iPhone 6s Plus and can delete individual messages by touching the particular message a box appears below giving the option to move or more, there maybe the option to delete in the bottom left corner or press more and then you will have the option in bottom left corner but having said all that I suppose it depends on what phone you're and what OS you're on. I have a 5s. Touch & hold on a message from the person whose messages you wish to delete. Options given are copy or more. Tap more & then at the top left hand side 'Delete All'
