When I go to sites like this where I have to log in, I get a pop up message that says 'Would you like Edge/Chrome (depending which one I'm using) to remember your password' with the options yes or never to which I always reply never.
My question is I always have to select never, so I'm wondering which part of never do they not understand? What setting do I need to change?

The site you're visiting already knows your password. All that 'remembering' does is to store it locally, within your browser's configuration. As long as nobody else has physical access to your computer, it can't do any harm to store it.
