I have had a look online for reasons why it might be doing this and nothing. All I can rec. is go to the epson website and ask for help from customer services or tech help.
Have you tried uninstalling, then reinstalling?
Unlikely that your scanner has packed up because you CAN scan in a whole document. Check your manual for the setup for copying. I have an Epson RX640 all-in-one but it has a screen which shows me the settings eg A4 / text/ 100% and color or B&W etc. For your model, there is an Epson Smart Panel Window for application like the Copy Center under your Start and Programs menu. The manual and help are shown below:-

For Windows users:
Click Start, point to All Programs (for Windows XP users) or Programs (for Windows Me, 98, or 2000 users) and then EPSON Smart Panel, then click EPSON Smart Panel.
