You can't do it by simply using the functions within Windows:

However you can use security software to create password protected 'virtual drives' where you can put whatever you want. I use Steganos Safe which is sometimes given away free on magazine cover disks. Otherwise it costs US$39.99 (about £25) here:

Alternately just encrypt the folder and make sure you have a password set for your user account on windows, then the folder will only be accessible by your user account when it's logged in.

Did you see the price of it :-O !!!
Are there 3 extra 0s in the middle?
Keep the data on a USB dongle (flash drive) They're getting seriously cheap these days. If you have large files, pictures / video, an external hard disk would do the trick.
How would moving the files onto something that can be lost easily help security?

cheers all ...id just like to be able to choose individual docs, like a letter or photo or something, that say i left my cpmputer unattended, if someone tried to open it thyed be asked for a password...i dont want to have to move things to a special place, or go through a rigmarole...just something like perhaps rightclick>create password> set...kind of thing...
With those requirements, EncryptOnClick would meet your needs. It's free, easy to use and I'm happy to recommend it to you ('cos I've been using it for years!):
