My friend is stuck in Spain and she had a flight home booked in May, but it was cancelled. She is now booked for 14th June. I think you will be very lucky to get a flight in May.

Flights are still coming in from Madrid if you could get the train there

there's one train per day from Santiago to Madrid, leaving around lunchtime and into Madrid about 6pm.

It looks like Renfe (the train co) is not selling tickets at the moment. Maybe get the coach (Alsa) instead.
