Once your booking has been accepted then you shouldn't need any further proof of parental consent.

I know someone who recently took a 16 year old (not theirs) to Portugal - they were stopped at the border and refused entry, because they didn't have a signed permission from parents. I also know another person 17 years old who was refused entry into Gibraltar because of the same reason. So I would definitely check
