we wanted a sun holiday jan this year and after doing much research booked a cruise down the nile. It turned out to be much better value than we had anticpated as, although id reasearched weather, temeratures etc i had no idea what was to be seen in the area. Was quite amazing. Temps low 30's and our tour guide from cairo was 29 and had only known it to rain 1 day in his life!! Sun can be guaranteed we thoroughly enjoyed. i case you wonder we cruised from luxor to aswan.
Canaries are pretty much the same all year round. Nice and quiet in Jan too, after Xmas/ New Year rush.
I remember spending Xmas day on beach sunbathing, then going up Mt Teide for a snowball fight - strange when you only have to drive about 30 mins!
I'm fairly sure that Kenya and Tanzania are hot at this time of year and flight times are around 9 hours.
Failing that South Africa, although slightly further away (I'd guess at 10-12 hours) would definitely be hot as December - January is their equivalent to our July - August summer months. Cape Town is a great place to visit.

I was in tenerife january of last year and the weather was very dodgy. Prob 2 hours sunbathing on 4 days out of 7. Hence the further research for this january. I
think alot of people under wrong impression of canaries that time of year
I lived there for 3 years. You generally get a couple of weeks worth of dodgy weather per year. Sounds like you lucked out.
If you've already been, probably worth checking somewhere else out htough - variety is the spice of life and all.
just got an incredible deal to kenya - flying 31st december although seemed to be good deals right into january flying one or 2 weeks later. booked through thomsonbeach.co.uk. Egypt good weather and worth a visit and Canaries normally good but seem to have been having it a bit mixed lately. We are getting all the good weather in Scotland - surprisingly (not in Jan though I bet!!)
Gran Canaria. Its fab all year round a little quiet in January but still good weather! Hotel Barcelo Las Margaritas is lovely been 10 times book direct with them also available in Thomson and First choice etc
